Broccoli Mousseline Recipe

Ingredients:

  • 1.5 kg broccoli, cut into florets
  • 1 white onion, sliced
  • 10 g salt
  • 3 g pepper
  • 15 cl olive oil
  • 60 g goat cheese
  • 20 g chives, sliced

Instructions:

  1. In a saucepan, sauté the sliced onion with the salt, pepper, and olive oil.
  2. Rinse the broccoli florets with warm water.
  3. Add warm water to the sautéed onions and bring to a boil.
  4. Immerse the broccoli in the saucepan and cook for 10 minutes.
  5. Blend the broccoli, onion, and goat cheese until smooth.
  6. Add some cooking stock for a creamier puree and adjust the seasoning as needed.
  7. Season with a drizzle of olive oil and sliced chives before serving.
